Congratulations Glen.
It takes literally 5 minutes of idling for the temp gauge to move to the first white mark. So if you're just idling for a couple of minutes, don't worry.
The gauge needs to be well over to the right, almost to the red zone for the fan to come on.
Before you do too much more, run a test on your oil pump. The procedure is simple and is in the book. Make sure enough oil is getting through.
I know I sound like a sales rep for Rotary Recycle but I say this because it really is something you need to consider. Jess has been-there-done-that and that is why he's come up with essential alternatives.
Buy a new design oil line check valve from RR and fit it (it's the banjo union at the front of the carby). You'd be amazed how many of these don't work. I have a friend with an all but trashed engine which was helped on its way by a faulty check valve.
These two things are pretty important and unique to the RE. There's a lot more to check but it'd be the same for any bike coming out of storage (steering bearings, swingarm, fork seals etc etc).

I would also add that if you are going to place an order with Rotary Recycle you should also consider ordering an air filter element. It has the correct restriction

Hi Glenn, I am sure I have mentioned this before, untill your oil pump etc has been proved run on premix of 20/50 oil and petrol @100:1 ratio, also check the oil tank cap has a vent hole in it, mine didn't and collapsed the tank (just as well the pump was in good order)
Regards Stuart.
