Should be a few out there for you. The general advice has been to buy the best you can afford and don't accept "ran when parked" as a definitive assessment of the engine.

I'm seeing some clean running bikes around $7000. Not running crap shoots around $3000. I'm 51 and haven't had a mid life crisis yet so I am ok with $7000 but I don't want to be the naive new kid that pays way too much.

Probably the best thing is ask questions on here, post photos or links to the ad etc. There's plenty of advice to be had, especially the bit about buying a decent runner in the first place. Some of us may even have a bike or two for sale as there are quite a few on here who own multiple RE5's!
$7K should buy a nice running, on the road bike. It may need some very minor cosmetics but should be a rider that you could just hop on a cruise.
You may even find one of us near to you in NC to help out with some pre-purchase checks. Not me, I'm down under!

There's a bike down here in Australia owned by a friend that, sadly, will be up for sale very soon. I'll give the details when its ready but it pretty much is "The World's Best RE5" in my opinion. Original, low miles, unrestored, runner. It has a couple of things that money pretty much can't buy in an RE5, and "runner" is the biggest understatement you'll ever see in this case.

What is it- good fuel consumption? Why would anyone worry about fuel consumption on a rotary we all know there average , mine gets 10lt per 70 mls , at high speed 70+ mph open roads and having fun
