To get a nice durable finish ask for black base with clear 2 pack over the top. Not original but will last a looong time!
I would go with bare metal on the tank as mine looked mostly good on the outside but when I stripped it back it had lots of little bits of surface rust underneath.
Can't help with paint shops or price!

No probs. You could go with plain black two pack urethane but the COB (clear over base) gives a better, deeper finish.
You'll want to have clear over the pinstriping anyway so that pretty much makes the decision easy.
The pinstriping should be fine in modern vinyl pinstripe material, some will insist on painting them on- whatever floats your boat. Not sure what Suzuki used when they did them.
If you want to strip the tank yourself it's really easy. Paint scraper (or large very sharp wood chisel if you're feeling brave and can be careful) and heat gun. Heat the paint good and hot- then scrape off. You could also use a wire brush in a drill to get into corners and along the seam.
Or use paint stripper. I went the environmentally friendly route. Maybe because I couldn't be bothered to get some stripper but as it turned out it came off really well with the heat gun anyway. Underneath the tank is tricky so maybe use paintstripper on that.
**Edit: obviously don't use the heat method on the side panels as they will melt! Sandpaper is your friend. Some paintstrippers will melt plastic too.

Just to answer a question... Suzuki used vinyl.

Just find a local body shop ....Shop around to these interested in spraying bike parts ...Often a nice side line for some to fill in there spare time ....I then take the tank to a sign man who will put decals on for the cost a few pints of beer ...then take back for final top coat ....£150-200 ...
